It used to be even better. The Fu Chao Oyster Cake was once plumper, juicier, and beautifully golden — not so brown or charred. Although deep-fried, it used to have that perfect crisp crunch on the outside and moist texture inside, with a lovely hint of peanut that tied everything together. This time, it felt a little thinner and less moist, and the texture wasn’t quite as crunchy as before. I’m not sure what changed, but it doesn’t taste exactly like it used to. That said, it’s still tasty — the flavor remains comforting and true to tradition, and it’s still one of the few places that keeps this nostalgic snack alive. For the price, it’s fair and satisfying. I just hope they bring back that old magic that made it truly unforgettable.

My first time trying Fuzhou Oyster Cakes and loved it. Huge amounts of flavour in the oyster cake and great texture - crispy on the outside and soft in the middle. Matches well with the chilli sauce, too. The uncle serving us was friendly. Visited midweek about 12pm - no queue. Price was good at $2.50 per oyster cake. Happy to have finally visited here.

I really like the oyster cake here. Been having it for years. It has gotten flatter with slightly less ingredients over the years but the taste of nostalgia and a well done fried snack keeps me coming back. Batter is really thin (nothing like those floury wet ones you get at the pasar malam), seafood is really fresh and its so crunchy yet not greasy. Theres oyster, prawns, pork and cilantro inside. Im not sure if you can custom orders. Eat it fresh and hot. Its so delicious. Uncle is very friendly :)

Maxwell Fuzhou Oyster Cake at Maxwell Food Centre is a true standout, earning its Michelin recommendation with a unique twist on a local classic. This humble stall delivers an exceptional culinary experience, where every bite of the oyster cake tells a story of tradition and innovation. The oyster cake is a marvel of contrasts: its outer layer is perfectly crispy, offering a satisfying crunch that gives way to a soft, succulent interior. This delightful juxtaposition creates a multi-dimensional sensory experience that has food enthusiasts raving. The crispness on the outside locks in the flavor, while the gentle softness inside ensures that each oyster is tender and brimming with freshness. At the heart of the dish are the oysters, carefully selected for their quality and freshness. They mingle harmoniously with a subtly seasoned batter, allowing the natural brininess of the seafood to shine through, complemented by a nuanced blend of spices that enhance rather than overpower. The balance of textures and flavors is a testament to the stall’s dedication to perfection and traditional culinary techniques.

The crust is crispy and filled with a mix of minced meat, oysters bits and coriander. I even found a small prawn in the fillings. I wish it could be less salty though. While these are best enjoyed fresh and piping hot, they hold up surprisingly well. I bought the snack home and a quick heat-up in the toast revived the crispness. Update Sep 2025: Among the few oyster cake stalls I've tried, this one is the best. The cakes are consistently fresh and generously filled. Despite the price increases over the years ($2.50 now), I think they are still worth it.
